People who are diagnosed to have diabetes should follow a diet that is good for health and contains all the nutrition that they need. This is a simple recipe and needs 2 cups of finely chopped onions, 2 tbsp. of olive oil, 1/3 cup of red wine vinegar, ¼ cup of chopped red pepper, 2 tbsp. of minced parsley, 2 cloves of minced garlic, 2 tbsp. Equal Spoonful, ¼ tsp. Of salt, ¼ tsp. of freshly ground pepper, 1 can of great northern beans which have been rinsed and drained, 1 can of black beans which have been rinsed and drained, and red pepper rings. The onions should be sauted in oil on a medium flame and should be removed from the flame once they are soft and then left to cool. Then the vinegar, red pepper, parsley, garlic, salt, pepper and onions should be stirred well together. Then this mix should be poured along with the combined beans in a bowl and mixed well. The red pepper rings can be used for garnishing.
The rice salad recipe is another famous recipe. This needs 4 cups of hot cooked rice, 1 can of kidney beans rinsed and drained, 1 small onion chopped, ¼ cup of vegetable oil, 2 tbsp. of white vinegar, 1 tbsp. of granulated sugar, 1 tbsp. of pickle relish, 1 ½ tbsp. of chili powder, and 1 medium green pepper which has been chopped. The rice should be mixed with the beans and the onions in a bowl. Mix the vinegar, oil, sugar, relish and chili powder in another bowl and then mix it with the rice, beans and oil. Cover the dish and leave it in the fridge. Add the green pepper just before serving.
